Mushroom and Camembert Quiche

Mushroom and Camembert Quiche that melts in your mouth

Ingredients

Pastry for 9-inch pie crust

½ cup finely chopped shallots

1 ½ cups of your favorite mushrooms, sliced and sautéed if desired

¾ cup freshly shredded cheese

4 eggs

2 cups heavy whipping cream

1 teaspoon salt

½ teaspoon white pepper

¼ teaspoon ground nutmeg

1/3 pound Camembert cheese

Recipe Steps
Step 1

Pre-heat oven to 425°F. Roll out Flaky Pastry Pie Crust and carefully place into a Lékué quiche pan, pressing firmly against bottom and sides. Trim edge of pastry even with top of the quiche dish.

Step 2

Sprinkle ¼ cup shallots, ¾ cup of the mushrooms and all of the Swiss cheese on the bottom of the crust. Add the remaining ¼ cup shallots, ¾ cup mushrooms to the first layer of ingredients. Beat eggs slightly; whisk in cream, salt, pepper and nutmeg. Pour into Lékué quiche pan. Remove the rind of the Camembert cheese and cut into slivers. Place on top of the mixture.

Step 3

Bake 15 minutes at 425°F. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Let cool 20 minutes before cutting.
